Tomato Zucchini Bake

Day 3 of our 24 Day Challenge we had this excellent meal! It was pretty easy to make even though there was quite a bit of chopping involved. The recipe actually does not call for meat but I added some Italian sausage that we had in the freezer. I sometimes like to add different items to recipes that will better suit our tastes. Since we do enjoy meat except for an occasional meatless Monday, I decided to go ahead and use up what was in the freezer. A lot of times these additions are items that I have lying around that I need to use up anyway. I did forget to put the basil on at the end and I wish I would have remembered. Nate really likes his basil and I think it would have kicked the flavor up a notch! Next time!
