Chile Rubbed Grilled Chiken With Salsa and Spanish Rice

Tonight we tried one of the numerous recipes I found in the Food Network Magazine. A lot of times the recipe is only an entree and I have to figure out sides to make a full meal. Tonight I went with a salad and Spanish rice. I made the rice myself by mixing some chicken broth, uncooked rice, tomatoes, jalepenos, onions and a little ground cumin. I have a rice cooker that I just put all the ingredients in and cook in the microwave. If you don't want to tackle making the rice yourself you can certainly buy a pre-made mix at the grocery store. For the chicken I made the recipe from Food Network Magazine as I mentioned above. The magazine was honestly one of the best gifts I have ever received! Look for a lot more recipes pulled from this source!

Flank Steak with Summer Squash and Carrots

 This recipe is a little different because what I had originally planned to make did not work out.  So now I had a flank steak in the refrigerator that needed to be cooked and eaten since I ended up not using it for the other recipe. For the steak we just put some seasoning on it and threw it on the grill. I used some Worcestershire sauce, garlic salt, pepper, salt and a little red pepper.

Now the steak was taken care of and I had to figure out what else we were going to eat. I had a lot of extra carrots that did not  get eaten over the weekend so I decided to make some of those. My Mom used to always make brown sugar carrots and that sounded good so I went with that. Super easy and so good! I just put the carrots in a pot, cover them with water, add about a tablespoon of butter and then add in some brown sugar.


Lastly we grilled summer squash and onions using a recipe I found in Food Network Magazine. The link to the recipe is as follows:

I could not find the cheese that the recipe called for so we just sprinkled on some shredded Parmesan cheese that we had in the fridge instead.

All in all it was a quick and easy use for some ingredients that we needed to use up. Don't be afraid to be creative with what you may already have in the cupboards and refrigerator or freezer. Good luck and have fun!

Beef and Butternut Squash Tangine over Cauliflower Rice

Nate found this recipe on The Smarter Science of Slim and asked if we could give it a try. Once I started reading the ingredients I was a little skeptical because some of the ingredients did not seem to go together. Then I made it and it turned out to be really good! I do have a couple of modifications to the recipe that I want to share. The recipe calls for this spice called garam masala that I cannot seem to locate anywhere. So obviously that did not make it into the meal! It also says to use canned beef which I personally would never do so I bought some beef that is typically used for stew. It is already cut up into pieces so it makes it easy. I also have been able to find the butternut squash in packages already cut up which is another time saver.
