Grilled Chicken with Basil Dressing and Zucchini Crisps

This week's recipe comes from Food Network. While on vacation we picked up some produce local to the area and wanted to try out something different. We decided to do the chicken because we love to grill and Nate just so happens to be a big fan of basil so I found this recipe for him. We picked up some zucchini on our trip as well as some artichokes. We made the artichokes but thought they were a lot of work for not much of a reward. I will link the recipe for the artichokes if you feel so inclined to make them. The zucchini crisps turned out to be really good and a departure from how we usually prepare it. Chicken Kabobs with Rice and Caesar Salad

This is not as much of a recipe but more of a meal suggestion. There are many times when we have to run over to the store and pick up something quick and easy to make for dinner. Sometimes our schedule just doesn't allow us to plan something out ahead of time and follow a recipe. This was one of those evenings. We decided to have kabobs which is definitely very easy to make. I marinated the chicken for 15-30 minutes while preparing the vegetables and sides. I just used a store bought marinade that didn't have a lot of preservatives and ingredients that I did not recognize. We usually use bell peppers, red onion and tomatoes for our kabobs plus the meat of your choice. Once I cut all the vegetables I prepared the kabobs and Nate grilled them up.

We had rice and caesar salad for sides. I personally like Uncle Ben's Long Grain and Wild Rice Original Recipe. For the salad I just bought the mixed greens added some shredded and grated parmesan cheese, some sliced almonds and Newman's Own Caesar Dressing. I feel that Newman's Own is one of the better options for salad dressing if you are going to buy it versus making it yourself. Since we skip the croutons, I recently tried adding in the sliced almonds. It gives the salad that crunch that you may be missing from not having the croutons and it tastes really good! It is also a better option to leave out the croutons. And there you have it... a quick and easy meal that is equally delicious.

Almond Pancakes

This week we decided to switch it up a little bit and go with a breakfast recipe. It comes from a new source purelyprimal.com. As far as ingredients, everything should be easy to find except for the arrowroot powder. When I made these I was not able to go to more of a specialty store and could not locate the arrowroot powder at the local grocery store. I obviously skipped it all together and they turned out just fine. I am a big fan of pancakes so I am always a little worried to try out new recipes but I decided to go for it. So glad I did! These were literally some of the best pancakes I have ever had! I honestly do not think we will go back to any other kinds of pancakes. Apple Crumble

Ask and you shall receive... This recipe is another dessert. It is from a new source purelyprimal.com. I used granny smith apples in this dessert because they are the best to use for baking and cooking purposes. I also couldn't locate tapioca flour so I left it out. You may have trouble finding the coconut butter though. I found it at my local grocery store but you may have to try a specialty store like Trader Joe's or Whole Foods. Grilled Chicken Chile Avocado Melt

This week's recipe comes from a new source, www.purelyprimal.com. This recipe is a little time consuming but totally worth it! For whatever reason I can never find poblano peppers so I used pasilla peppers. Also I used yellow sharp cheddar but I think the recipe called for white cheddar.  Other than that I followed the recipe exactly. We thought that some more avocado would be nice so we will have to try that next time.  We had sweet potato fries and roasted cauliflower as sides.
