Aromatic Vegetables With Savory Flank Steak

This week's recipe is once again from Mark's Daily Apple. I typically am not a fan of eggplant but I thought I would give it a try. I have found recently that some things that I didn't like previously once I tried them again I actually enjoyed them. So don't be afraid to be a little adventurous and try some new things. Nate actually did the preparation for this recipe before I got off work so that it would go a little faster once I got home. We prepared the recipe according to the directions but next time we want to cook the meat on the grill instead of in the pan on the stovetop. You get such better flavor by grilling the meat versus pan frying. Sometimes we like to modify the recipes to make it our own. Don't be afraid to make modifications according to your specific tastes. You can add in an ingredient that you think might taste good with the dish or just by simply preparing an ingredient a different way. Be creative. If it doesn't work out, at least you tried and you know what not to do next time! The link to the recipe is as follows:

Butter Stuffed Chicken Kiev

This week's recipe is once again from Mark's Daily Apple. I ran into some difficulties while making this recipe but overall it turned out really good. I used a rolling pin to pound out the chicken. I should have made it thinner so that it would roll up better and this is the problem I ran into when I made this recipe. It didn't really stay together since it was too thick. I had trouble pan frying it so I had to bake it in the oven for a little while until it reached the correct temperature. It didn't quite look like the picture but I am sure it tasted just the same. We had couscous and salad with this meal. Couscous is a better option as a side than rice or potatoes so iit is good to add it to your meal plan. Good luck and enjoy!

Pumpkin Pie with Walnut Crust

This week I chose to go with a dessert for the recipe. At this time of year we know it is more difficult to maintain healthy eating habits. This pie contains no sugar so it is different than the pumpkin pie we are all used to. It is still really delicious and good for you also! The only item I was unable to find was the arrowroot powder as usual. It turned out just fine without it though.So if you are looking for a healthier alternative for a dessert this holiday season, look no further. Enjoy!

Moroccan Chicken

This week's recipe is from Mark's Daily Apple. I was searching for some new recipes and stumbled across this one. I made it last night due to a unexpected day off. It was a good thing I was able to make it when I had extra time because it is really time consuming. If low on time I would suggest preparing part of it ahead of time if possible. You can chop the vegetables and make the filling so that you just have to bake it at dinner time. It has to bake for almost an hour so if you can prep some of the work beforehand it will cut down on your time. All the work was definitely worth it though. We really enjoyed this one and will be having it again very soon I am sure! Enjoy!

Chicken Casserole

So this is not so much of a recipe but more of a conncoction I threw together using random items found in the fridge or pantry. Some of the items needed to be used up before they went bad. I started out with two cups of brown rice. I prepared the rice according to the directions on the package. I cut up two small yellow onions, a couple chicken breasts and a bunch of asparagus. I mixed all of this in a pan on the stove with about a half a cup of chicken broth and a half cup of white wine. For seasoning I added some salt, pepper, garlic salt and a little rosemary. I accidentally got a little heavy handed with the pepper so I would only use maybe a half a teaspoon or so. I cooked this mixture on the stove until the chicken was cooked through. I then stirred the chicken mixture with the rice and put it all into a casserole dish. I topped it off with some crackers I found and some shredded gruyere cheese. I just put the crackers in a food processor and then grated some gruyere I had in the fridge, mixed it together and sprinkled that on top. I baked it in the oven at 350 degrees for about 20 minutes or so. It turned out really good! I always encourage you to think outside of the box and improvise with some items that you may have available or if you are in a pinch and need a quick meal.
