Tex-Mex Rice bowl with avocado butter lettuce salad

This week I had to find a recipe in a pinch that had to be quick and easy. I found one online through the Cooking Light website. There was quite a few options for meals that take 40 minutes or less to prepare. Since I had to shop for everything once I got off work, this definitely was a good option for me. I did change the recipe a little bit. It calls for those ready rice pouches that you cook in the microwave and I don't really like that so I made my own rice. I basically doubled the recipe also so that we would have leftovers for the next days lunch. So I used 1 pound of ground sirloin, a whole package of taco seasoning, 1 cup of uncooked rice (which makes 5 servings once cooked) and kept everything else pretty much the same. The only thing I would do differently next time was cut down on the cilantro. I don't really care for cilantro that much, so for me it was all I could taste. For the salad I pretty much followed the recipe exactly except I didn't use a whole onion which turned out to be a good thing because the onion I got was really strong and had I used the whole thing it would have completely overpowered the other flavors. I used the rest of the onion for the pico de gallo. Here is the link to the recipe:

Halibut with Olive and Bell Pepper Couscous

Recently we subscribed to Cooking Light Magazine for some additional recipe resources. I got my first issue about a week ago and already found a recipe to feature as the recipe for this week. It was a really easy and quick meal to prepare which is always a good thing. Some other recipes I have made have also called for Israeli couscous and I haven't been able to find it anywhere. When I went to the store I found out that pearl couscous is the same thing as Israeli couscous. The only thing I did differently then the original recipe was I skipped the asparagus because we had it a few times the previous week. We had some roasted cauliflower instead. I will include the recipe for the cauliflower in case you may want to have it also. The recipes are as follows:

Spaghetti Squash and Meatballs

This week's recipe is kind of quick meal idea that I threw together for something different than the usual. A while back we tried a recipe that was served over spaghetti squash. This was the first time either of us had ever had spaghetti squash and we found that we really enjoyed it. So since we do not eat pasta anymore we obviously never get spaghetti and meatballs. It sounded good so I thought we could try it over the squash. I just got some premade meatballs and I had some leftover sauce from another meal that I wanted to use up. I cooked the meatballs in the sauce on the stove. I get off work pretty late so to save time I put the squash in the microwave to speed up the cook time. I microwaved it for about 5 minutes and then baked it in the oven for 20 minutes. After it is done baking you can just scrape out the meat of the squash and then serve it with the meatballs and sauce. We also had some salad to make the meal complete. I have included a recipe for the squash to help out with the preparation.

Carne Asada

Nate and I both really enjoy Mexican food and for the most part it can be pretty healthy. There are some foods that you could avoid to make most Mexican meals healthier which is what we did with this one. This recipe comes from one of our favorite sources, Mark's Daily Apple. We have tried it a couple times before deciding to make it the recipe of the week. We always enjoyed it every time we had it so we thought we would pass it along to you. Nate did most of the work on this one since he prepared the marinade and cooked up the meat on the grill. I made some pico de gallo and chopped up avocado to have with the meat. We also had spicy sweet potato fries and a salad. We had some corn tortillas in the fridge that we were going to make tacos with but just decided to keep it really healthy and eat it without it. Surprisingly it was just as good without the tortilla and I found that I didn't even miss it! We found that we cannot be afraid to try things that may be outside the "norm" because it probably won't be as good. That is a myth that I think we all can get over easily. Top the meat with what you like. We had the pico de gallo, avocado, shredded cheese and a little sour cream. We have to indulge somewhere! The link to the recipe is as follows:

Salmon Burger with Sweet Potato Chips

This week we have another recipe from one of the e-books we purchased. The book is called "I Love Real Food Cookbook". Nate and I thought for the longest time that we did not like salmon and then we were having dinner at my aunt's house and she made salmon. We can't be rude and say that we don't like the meal she was preparing for us, so we felt we at least had to try it. We both thought it was delicious and decided that we would have to try some salmon recipes .

I was looking through the e-books and found this recipe and deciced to give it a whirl. I prepared everything like the recipe called for except I added a little dijon mustard to the burgers. Maybe a tablespoon or so. The sweet potato chips were really easy and equally delicious. I believe we had a salad with these as well. Another option that would be good is some baked cauliflower. A recipe I use and really enjoy is as follows:

Salmon Burgers with Sweet Potato Chips

for 4 Burgers

2 salmon filets, finely chopped

1.5 tbsp. ground almonds

1 egg yolk

1 hand full cilantro, chopped

1 hand full parsley, chopped

 

for sweet potato chips

1 big sweet potato

chili flakes to taste

 

Preheat the oven to 200 degrees

Mix the salmon with salt, pepper, almonds, the yolk and the herbs.

Put in the fridge for an hour.

Cut the sweet potato into chips and mix with salt, pepper, coconut oil and chili powder.

It works best when you mix with your hands!

Put onto a baking tray and bake for 30 minutes.

While the chips are baking, form patties out of the salmon batter and fry on medium heat in coconut oil, til they're slightly browned.
