Sweet Potato Meatloaf

Day 5! I got a little behind there for a couple of days but trying to keep on it and post the recipes the day we have them. We have not yet tried this one but I am super excited to try this one. I am a big fan of meatloaf and sweet potatoes so this is sure to be a hit! Since we both have busy schedules, I am going to make this in the morning before I go to work and put it in the refridgerator. On Friday's Nate actually gets home before me so I will leave instructions for him to put it in the oven since it takes almost an hour to bake.

 

We eat salad quite often before the main course because 1. It's good for you, 2. It fills you up so there is less of a chance of overeating once the main course is served.  Tonight we will most likely have a salad and a Mediterranean Quinoa Blend I bought at the store. Ideally I would love to make my own quinoa but sometimes we have to find alternatives to save time.

Taco Stuffed Zucchini Boats

Day 4 we had tacos in the form of zucchini boats! These were really good but it should be noted that this recipe is somewhat time consuming. Scooping out the zucchini and chopping vegetables took the most time. I boiled the zucchini shells a little too long so they were pretty soft and did not hold the stuffing too well. I got distracted doing other stuff and let them boil for too long. They were still good thankfully! I also forgot to buy a bell pepper so I added some frozen vegetables I had on hand. Birdseye makes a vegetable blend with peppers, corn and black beans. I added about a cup of this vegetable medley.

I also had some of the stuffing left over once I filled the zucchini so I scrambled up some eggs and mixed it in with the leftovers. So not only did we have a tasty dinner, we now have breakfast as well!

Tomato Zucchini Bake

Day 3 of our 24 Day Challenge we had this excellent meal! It was pretty easy to make even though there was quite a bit of chopping involved. The recipe actually does not call for meat but I added some Italian sausage that we had in the freezer. I sometimes like to add different items to recipes that will better suit our tastes. Since we do enjoy meat except for an occasional meatless Monday, I decided to go ahead and use up what was in the freezer. A lot of times these additions are items that I have lying around that I need to use up anyway. I did forget to put the basil on at the end and I wish I would have remembered. Nate really likes his basil and I think it would have kicked the flavor up a notch! Next time!

Cauliflower Fried Rice

Day 2 brings Cauliflower Fried Rice. We love anything with cauliflower so this is guaranteed to be a hit! This recipe is supposed to be a quick and simple one which will be perfect for when I eventually get off work. I plan to add chicken to this meal since we do enjoy meat most days. Quinoa Enchilada Casserole

For Day 1 of our 24 Day Challenge we are going with the Quinoa Enchilada Casserole. Sometimes we like to switch it up and do a "Meatless Monday" which is what we are going with this evening. We really enjoyed this meal. It was super easy and quick to make which is always good for us and our busy schedules. Definitely worth a try and a great start to our 24 Day Challenge!
